Got Apples?

On Sunday night I had the "sunday antsies"
Basically.... I was bored, Sophie was asleep, I was tired of watching tv, I didn't have a good book to read, & Brian was watching "shark week" on Discovery Channel. 

I wandered into the kitchen. I wasn't really hungry, just bored.
I looked at my fruit basket and it was overflowing with apples.
Over the past 2 weeks I have gotten a ton of apples from Bountiful Baskets.
A whole tree's worth it feels like :)
I like apples but they don't make my mouth water like a peaches or plums.
But I figured I needed to do something with them.

Can anyone guess the first thing that poped into my head?
Apple Cupcakes of course!
So I googled "apple cupcakes" and found a million carmel apple cupcake recipes.

YUM!

I started to read some of the recipes and realized I was missing one key ingredient. Milk.
You can't make frosting without milk and you can't make cupcakes without frosting.

Next Idea....

I saw a recipe with a apple topping.
I thought, "that would be good on pancakes."
 I looked at my box of pancake mix.

1 cup milk.

Dang!

Then I was hit with a creative experiment idea... "I could use apple juice instead of the milk. And then add some cinnamon. Cinnamon Apple Pancakes with Apple Topping "

"That could be good!"

I did just that. I used pancake mix and made it exactly like the box said only replacing milk with apple juice + 1 teaspoon {ish} of cinnamon.

I made apple topping and put it on top of the pancakes.

They turned out so tasty! I loved the cinnamon flavor in the pancake!
Next time I would put a little dollop of whipped cream on the top but they were still delish!

Here is the topping recipe:
Caramel Apple Topping:




2 apples cut into slices or chunks
4 tablespoons butter
4 tablespoons brown sugar
1 teaspoon cinnamon


1. Heat a medium pan over medium heat. Add the butter and allow to melt.
2. When the butter starts to bubble, add the apples and cook for about a minute, then flip the pieces over to cook the other sides.
3. Add the brown sugar and cinnamon and stir constantly until the sugar has completely dissolved. Let the mixture cook for another two minutes or so, until it starts to thicken to a caramel-like consistency.
4. Serve immediately


I know I am not the first person to think of Cinnamon Apple Pancakes but it was my first experiment with pancakes.

p.s. Does anyone want me to continue the "how i design my blog" tutorials? I am happy to
       share with you, really I am. I just want to know if anyone is using them since they take a
       pretty piece of time to write?

I love your tutorials! It makes it seem like I could one day do things myself.

My hubby makes the best pancakes ever. I really like his banana ones but the best he ever made were when I was pregnant. He put chocolate chips in them. They didn't need syrup or butter. It was like eating a freshly-baked cookie right out of the oven.

Oh man, now I want pancakes!

We just had apple cinnamon pancakes on Saturday for breakfast. They were yummy, but I did not make them from scratch.

I love strawberry pancakes. Yummy!
