Just a leftover idea...

Don't know about you but taco soup is a staple around here.
It is a tasty go to meal that is cheap to make and makes enough to feed a small army!

In fact it makes enough that we could potentially eat leftovers more than once!
Which, for anyone who knows Brian is not an acceptable idea.

My solution to the problem. Use the leftover taco soup as taquito filling.
May sound a little weird but it is really tasty!

Here is what I did:

get a white shell tortilla and place a small amount of taco soup in a line across the shell.
roll up and place the seam side down on a pan. {i always line my pans with parchment}
next spray the tops of the taquito with butter spray {pam} or melted butter.
sprinkle with kosher salt.
bake in over at 400 for 20-30 minutes or until crispy and  brown.
top with sour cream and salsa. enjoy!

they crisp up really well and are tasty enough that they don't count as a leftover!

Oh we might have to try this...we aren't leftover people either but love everything taco related.
