Roast Beef

My mother in law always makes Roast Beef for Sunday dinner.
Brian's favorite meal is his mom's roast beef and potatoes.

You know what that means?
He would love if I was able to make roast beef like his mom.

This is a challenging task considering that I am not a huge meat lover, and I don't have a lot of experience cooking meat.

Right after B and I got married I wanted to make him roast and potatoes just like his moms. Well lets just say... it was a little lot under par. I should have given up after I stood in front of the meat counter for 10 mins trying to figure out what roast to buy but I didn't. Needless to say, we don't have roast very often. Ok never.

But, we might now that I learned the trick of tasty roast beef from my mother in law.
The secret is to......
Add 1/4 cup of Giovanni Herb Vinegar over the top of the roast before cooking.

Giovanni Herb Vinegar
1 sprig rosemary
1 small handful of oregano
1 bay leaf
1/2 teaspoon peppercorns
2 garlic cloves
1 sprig basil
2 bunches of thyme
1 orange wedge peel
Red Wine Vinegar

Wash all herbs
Arrange herbs and spices into a 17oz bottle {or close}
Pour vinegar over ingredients and allow 2 weeks for flavors to infuse

We {all the girls in the family} made Giovanni Herb Vinegar bottles last saturday night while the husbands were at the priesthood session.

Here is how mine turned out....

Guess this means I am going to need to buy a roast huh?

And vinegar basically never goes bad so thats another plus!

Super cute bottle! And good luck with it. My mother in law makes things that Scott loves that even if I attempted to try.. I know I would fail! : ) I think it's like that for probably most every newish married couple! Unless your name is Rachel Ray!
